Serves 4
Ingredients
• 470 g (1 lb) swai filets
• 235 g (1/2 lb) ground chicken breast
• 1 tablespoon extra virgin olive oil
• 235 g (1 pint ) cherry tomatoes (cut in half)
• 1 medium onion (sliced thin)
• 2 cloves garlic
• 1 ear corn
• 1 potato (sliced thin)
• 1/2 cup dry white wine
• 1 tablespoon parsley (finely chopped)
• 2 tablespoons of lemon juice
• 1/4 teaspoon salt
• 1/2 teaspoon black pepper
• 1/2 teaspoon garlic powder
• 1/2 tablespoon crushed chili pepper
Preparation
1. In a saute pan, heat extra virgin olive oil over medium-high heat.
2. Add ground chicken along with salt, black pepper, garlic powder, crushed chili pepper, and parsley. Cook for 3 to 4 minutes.
3. Add garlic, potatoes, corn, and onion to the pan, and pour wine over top. Cover and cook for 10 minutes.
4. Remove the cover, add the tomatoes and stir.
5. Add fish, and season lightly with salt and pepper. Cook for 7 minutes until fish is opaque.
6. Top fish off with parsley, lemon juice, and some extra virgin olive oil.
